Day 9 — Lunch

Grilled Chicken Pita with Hummus, Cucumber, and Tomato

Purpose: protein-rich, sustained energy · Nutrix Score: 8/10

Makes: 1 serving · Prep time: 10 minutes, plus 15 minutes to marinate · Cook time: about 12 minutes

Ingredients

  • 1 small boneless, skinless chicken breast (about 5–6 oz)
  • 1 whole wheat pita
  • 2–3 tablespoons hummus
  • ¼ cucumber, sliced
  • 1 small tomato, sliced

Pantry basics for the chicken

  • 1 teaspoon olive oil
  • 1 teaspoon lemon juice
  • 1 small garlic clove, minced (or ¼ teaspoon garlic powder)
  • ½ teaspoon dried oregano
  • A pinch of salt and pepper

Directions

  1. Prep the chicken. Pat it dry. If thick, slice in half horizontally or pound to about ¾ inch. Season with the olive oil, lemon, garlic, oregano, salt, and pepper. Let it sit 15 minutes (or overnight).
  2. Cook the chicken. Grill or pan-cook 5–6 minutes per side until it reaches 165°F (74°C). Rest 3–5 minutes, then slice thin.
  3. Warm the pita. Heat in a dry skillet 20–30 seconds per side, or microwave wrapped in a damp paper towel for 10–15 seconds.
  4. Build it. Spread hummus inside the pita, then tuck in the chicken, cucumber, and tomato.

Make-ahead and dorm-friendly options

  • Cook 2–3 chicken breasts at once and store cooked chicken in the fridge for up to 3–4 days.
  • Pack pita, hummus, and vegetables separately and build right before eating so it does not get soggy.
  • No stove? Use pre-cooked grilled chicken strips or rotisserie chicken (skin removed).

Heavy training or game day

Add a second pita or a piece of fruit on the side, and use a little extra chicken, so lunch carries the athlete through a long afternoon.

Food safety reminder

Wash hands, cutting board, and knife with hot soapy water after handling raw chicken, and keep raw chicken away from the cucumber and tomato.
