Purpose: protein + carbs for energy · Nutrix Score: 8/10

Makes: 1 serving · Prep time: 10 minutes · Cook time: about 25 minutes

Ingredients

  • 1 cup cooked chicken, shredded or chopped
  • ½ cup cooked wild rice (or brown rice)
  • 2 cups low-sodium chicken broth
  • ½ cup diced carrots and celery
  • A few whole grain crackers

Directions

  1. Simmer the soup. In a pot, combine the broth, carrots, and celery. Bring to a simmer and cook for 8–10 minutes until the vegetables are tender.
  2. Add the chicken and rice. Stir in the cooked chicken and wild rice. Heat through for 3–5 minutes.
  3. Serve. Ladle into a bowl and serve with whole grain crackers on the side.

Make-ahead and dorm-friendly options

  • Make a double batch and store in the fridge for up to 3–4 days. Reheat only the amount you will eat.
  • Works in a microwave if you do not have a stove — use pre-cooked chicken and rice, and heat with broth.

Heavy training or game day

Add a piece of fruit or an extra handful of crackers so lunch carries the athlete through a long afternoon.

Food safety reminder

Keep cooked chicken cold until you add it to the soup, and reheat leftovers until steaming hot.
