Day 1 — Lunch
Chicken or Burger over Greens
Purpose: protein + fiber · Nutrix Score: 7/10
Makes: 1 serving · Prep time: 10 minutes · Cook time: about 10–12 minutes
Ingredients
- 1 small boneless, skinless chicken breast (about 5–6 oz) or 1 beef or turkey burger patty (about 4–5 oz)
- 2–3 cups mixed greens
- 1 teaspoon olive oil
- A pinch of salt and pepper
Optional simple add-ins if you have them
- A few slices of cucumber or tomato
- A squeeze of lemon or a light drizzle of olive oil and vinegar
Directions
- Prep the protein. If using chicken, pat it dry with a paper towel. If the breast is thick, slice it in half horizontally or pound it to an even thickness of about ¾ inch so it cooks evenly. Season both sides with salt and pepper. For a burger, form or use a ready-made patty and season both sides.
- Heat the pan. Warm a skillet, grill pan, or outdoor grill over medium-high heat. Lightly oil the pan or grates.
- Cook the protein.
Chicken: Cook 5–6 minutes per side, until golden outside and no longer pink in the center. The safe internal temperature is 165°F (74°C).
Burger: Cook 4–5 minutes per side for medium, or until it reaches 160°F (71°C) for beef or 165°F (74°C) for turkey.
- Rest and slice. Let the chicken or burger rest for 3–5 minutes. Slice the chicken thin across the grain, or leave the burger whole.
- Build the plate. Put the mixed greens in a bowl. Top with the sliced chicken or burger. Add cucumber or tomato if using, and finish with a light drizzle of olive oil or a squeeze of lemon.
Make-ahead and dorm-friendly options
- Cook 2–3 chicken breasts or burgers at once and store the cooked protein in an airtight container in the fridge for up to 3–4 days.
- Keep the greens separate until serving so they stay crisp.
- No stove? Use pre-cooked grilled chicken strips or rotisserie chicken (remove the skin) and skip the cooking steps.
Heavy training or game day
Add a piece of fruit or a small handful of whole grain crackers on the side, and use a little extra chicken or a second small burger, so lunch carries the athlete through a long afternoon.
Food safety reminder
Wash your hands, the cutting board, and the knife with hot soapy water after handling raw chicken or raw ground meat, and keep raw protein away from the greens and any ready-to-eat vegetables.
